Kalamata olives, green olives, garlic, anchovy, capers,
fresh parsley, lemon juice, olive oil

1lb package lentils
1 small red bell pepper, chopped
1 small cucumber, chopped
2 scallions, chopped
1/2 cup seedless green or white grapes, halved
1/2 cup seedless red grapes, halved
1/2 cup hazel nuts or sliced almonds
1/3 cup fresh squeezed lemon juice
1/3 cup olive oil
1/2 tsp salt
1/4 tsp freshly ground black pepper
(Combine all ingredients and shake or whisk to combine.)
Cook lentils al dente.
Add all vegetables, fruit and nuts.
Toss with dressing.

Sautee almond slices in butter or coconut oil
Add mushrooms and continue to sautee
Mushrooms sauteed with almonds over couscous

Monterey Jack cheese for zucchini pie
Shredded Monterey Jack cheese
Two eggs, Monterey Jack cheese
Sautee zucchini, one large onion and Italian herbs,
dried basil, mint, parsley
Mix the sauteed zucchini with the egg and cheese mixture,
pour into crust made from Pillsbury crescent rolls.
