1lb package lentils
1 small red bell pepper, chopped
1 small cucumber, chopped
2 scallions, chopped
1/2 cup seedless green or white grapes, halved
1/2 cup seedless red grapes, halved
1/2 cup hazel nuts or sliced almonds


Dressing

1/3 cup fresh squeezed lemon juice
1/3 cup olive oil
1/2 tsp salt
1/4 tsp freshly ground black pepper

(Combine all ingredients and shake or whisk to combine.)

Cook lentils al dente.
Add all vegetables, fruit and nuts.
Toss with dressing.
