2 cups grated Gruyere cheese (if not available substitute with Swiss)
1/2 cup grated locatelli cheese
grated raw onion
1 inch thick French bread croutons (recipe below)
the butter and oil together in a large pan over moderately low heat.
Add the onions, toss to coat them in oil then cover with lid.
Reduce the heat to low and allow them to steep for 15 minutes.
After 15 minutes, uncover the pot, raise the heat and stir in the salt and sugar.
Cook onions for at least 40 minutes until they have turned an even, deep golden brown.
After the onions are fully caramelized, sprinkle them with flour, one tablespoon at a time,
thoroughly incorporating the flour between additions.
Cook while stirring for 3 minutes.
Add the wine in full, the grated garlic, the stock, a little at a time, stirring between additions.
Season to taste with salt and pepper, if needed.
Bring to a simmer and simmer for 1 hour or longer.
Lower heat until ready to finish with graitinéed topping.
Finish with the graitinéed topping:
Preheat oven to 300F and bring the soup back to a boil.
Arrange oven safe crocks on a large, foil-lined baking sheet.
To each bowl, add 1/2 teaspoon grated raw onion and 2 tablespoons of grated locatelli cheese.
Divide the soup among the bowls.
Stir to combine.
Brush french bread croutons with a bit of melted butter and place on top of the soup.
Top with a mound of grated Gruyere (or Swiss, if substituting.)
Bake soups for 20 minutes.
Finish for a minute or two under the broiler to lightly brown the top.
French Bread Croutons
1 loaf quality french bread
Preheat oven 280F
Slice french bread into 1 inch thick rounds.
Brush lightly with olive oil and grated garlic.
Place slices on foil lined baking sheet and allow to cook but not brown in the low heat of the oven.
Bread should be hard, very slightly golden but not brown.
If browning occurs, lower oven temperature.
Homemade vegetable soup
My Homemade Vegetable soup
46oz low sodium tomato juice
1 large white or yellow onion, sliced
3 zucchini, cubed or sliced (I did both for texture)
1 package of mushrooms
4 cloves garlic, grated
1 can dark red kidney beans
1 can pinto beans (or any other bean of your choice)
1 large can crushed tomatoes
a few handfuls of fresh spinach (can sub 1 package frozen spinach)
32 oz beef, chicken or mushroom broth/stock (I used beef broth)
red pepper flakes to taste
salt, pepper and basil to taste
Sautee onions in olive oil and butter, add the remaining ingredients,
lightly simmer, covered, for an hour and a half.
Turkey Chili over spaghetti
My Turkey Chili recipe
1 lb ground turkey
1 large white onion (diced)
1 large green bell pepper (diced)
3 ribs celery (diced)
5-10 dried red peppers (including seeds)
16 oz can Bush's Chili Beans
2 10 oz can Rotel Diced tomatoes with habaneros
1.25 oz Lacey's Special (dry) Chili Seasoning- HOT
[Substitute: 1 package McCormick's Hot chili seasoning]
splash of water (if needed)
4 cups shredded Sharp Cheddar
Brown and drain meat. Add vegetables, stir and cook on low heat for a few minutes.
Add seasoning and mix until well combined.
Add beans and tomatoes, mix well. Using kitchen scissors, slice up dried peppers, add peppers
and stir until well combined. Bring to a boil, stir and simmer on high for 30 minutes.
Lower heat and simmer for another 30- 45 minutes.
Stir at regular intervals.

Lacey's (better than the Olive Garden's) Minestrone Soup recipe
4 large zucchini, chopped
1 small to medium vidalia onion, sliced
3 cloves garlic, grated on a cheese grater
1 large can Progresso crushed tomatoes with Italian seasoning
1 can Progresso Canelli beans
1 can Italian green beans
half to full bag of baby carrots (frozen)
1 bag (4 servings) of 3 cheese and garlic tortellini
6 cups chicken stock
splash of water
palm-size or smaller measure of salt
palm-size measure each of oregano, basil and parsley
2 small pinches of dried or fresh mint
On medium heat cook onions in olive oil until almost translucent, reduce heat add garlic.
Add tomatoes, salt and mix together.
Add all other ingredients excluding the tortellini and bring to a boil.
Simmer covered for 2 hours.
Add tortellini and serve when tortellinis are cooked.
